What is Non-Diastatic Malted Barley Flour?
Naturally occurring enzymes in Malted Barley Flour are destroyed when diastatic Malted Barley Flour (natural dough conditioner) receives additional drying in order to develop more intense, unique and complex flavors and color. The result is Non-Diastatic Malted Barley Flours with unique flavors, colors and functions but with no addition of enzymes into the formula.

Characteristics: Cocoa extender/replacer. Malted Barley is processed to develop intense cocoa flavor then milled into a wholesome, healthy whole grain flour.

Non-Diastatic "Black" Malted Barley Flour Bakers Grind

Characteristics: Natural colorant. Malted Barley is processed until it is black in color, then milled into a wholesome, healthy whole grain flour that contributes no flavor when used in small amounts as a colorant.

Applications: Bars, Bakery, Bagels, Cookies, Cakes & Sweet Snacks, Toaster Pastries, Cereal, Sauces, Gravies and Seasoning Blends

"Sprouted" Wheat Flours Toasted
Characterisics: Wheat is sprouted then toasted to develop flavor and color; non-diastatic; whole grain flour for natural healthy, wholesome goodness; clean label; enhance eye appeal.
